The SAI-S01 9cm & SAI-S02 10cm are small paring knives that can be compared to the GS-36 in the classic Global line. The knife is made for small kitchen tasks, such as peeling vegetables or cutting up fruit. Global SAI produce two 9cm paring knives, the other being the SAI-F01. The difference here is that the S01 has a longer hollow handle. This makes the knife a bit more comfortable in the hand, but the handle with the thumb rest forces you to hold the knife in a certain way and we would suggest that makes this paring knife a better cutting and slicing knife than the F01.
